Dinner Tonight

Today may not have been the best day to make baked potatoes for dinner, considering it's 100 degrees outside, but I found this recipe and wanted to try it. I added a Spring Mix Salad with Shrimp and Avocado to make it more summer appropriate. It all tasted great, the house just got a little hot in the process.

I realize now the potato doesn't show up that well on the yellow plate...so here are the rest on a serving platter.


CRAB AND CHEESE STUFFED POTATOES

4 Medium Baking Potatoes
1 Cup Shredded Cheddar Cheese
1/2 Cup
Butter
1/4 Cup Heavy Cream
6 oz. Can of Lump Crab meat, drained
Dried Onion Flakes, Salt & Pepper to taste

Scrub potatoes and rub skins with oil. Wrap in aluminum foil and Bake at 400 for 1-1 1/2 hours until done. Allow potatoes to cool to the touch. Cut in half lengthwise and carefully scoop out the pulp, leaving the shell intact. Mash together potato, cheese, butter, and spices. Add cream, a little at a time, and continue mashing until desired consistency is achieved. Fold in crab meat trying not to break apart the lumps completely. Spoon potato mixture into reserved shells. Bake at 475 for 15-20 minutes until golden brown.
